
Job description
The Meat Science Laboratory Technician oversees the processing of beef, pork, and lamb carcasses and maintains the sanitation of the Meat Laboratory. This position is funded by a grant or restricted funds. Continued employment is contingent on the renewal of grant or restricted funds.
Assist in maintaining HACCP, SOPs and food safety records. Assist with demonstrations in labs for teaching, research and extension programs. Maintain equipment and facilities. Distribute all meat items (packaging, storing, shipping, etc.). Fabricate carcasses into roasts, chops, steaks and other standard cuts. Process carcasses from slaughter to cooler. Make sausages, ground meats, cutlets, value-added products and cured and smoked products.
