We are seeking a Pastry Chef de Partie to lead the pastry department and perform tasks to the highest professional standards.
Requirements
- Reports to the Assistant Pastry Chef in his absence to the Pastry Chef
- Performs the tasks assigned to him in addition to all matters related to his field of activity and ensures their proper and timely implementation
- Suggests and recommends steps and methods to maintain or improve the standards of production and quality
- Exercises responsible management and behavior at all times, positively representing the hotel management team and Hilton Worldwide
- Follows the correct production procedures according to the recipes issued by the Pastry Chef
- Prepares all kinds of pies and desserts according to recipes for all kitchen sub-sections
- Regulates thermostat controls of ovens and times all food stuffs being baked
- Ensures proper handling of equipment, prevents loss and damage to assets and goods
- Maintains his work environment clean and proper at all times
- Ensures proper standards of sanitation and hygiene
- Tastes on regular basis all baked goods, pastries and desserts to ensure correct taste
- Prepares decorative center pieces
- Ensures that all kitchen/restaurants outlets are supplied with their requirements
- Maintains and ensures Pastry section clean and orderly fashion at all
- Adopts “Clear as you Go” method of working
- Displays good teamwork attitudes towards his colleagues
- Assists in the on-the-job training of the pastry staff to maintain the highest standards of production
- Supervises staff and takes responsibility for various functions, tasks etc.
- Trains commis, helpers, trainees with staff interaction and referral to inter department manuals
